I have far too many ideas. They come to me all the time, but mainly during my walks in the forests and urban areas of our beautiful world.
And I love collaborations - they’re the best of both worlds.
I’ve enjoyed crafting menus with leading restaurants and for one-off events. Public speaking is an option if it means I can help more people understand the balance between the fragility and bounty of nature, in particular of the wild foods around us.
